Gluten free, healthy, flexible, fast and super easy! I have made these for years, you can pimp it up to include whatever extras you have in the pantry and it uses up those bananas that are going a bit brown.
Ingredients;
2 medium bananas going a bit brown
2 cups of Rolled Oats
Good pinch of salt
1 cup of vegetable oil
and then the extras – usually some nuts and some dried fruit about 1 1/2 cups of this all together, I have used almonds and cranberries or hazelnuts and dried apple or dried dates (pitted) and walnuts. This batch I did almonds, Craisons and ginger – yum!
Method;
Pre heat the oven to 180 degrees then Couldn’t be easier – whizz up your bananas, oil and salt and then add everything else and pulse so you still have chucks and not blended to a paste. Use a spatula to spread out onto a tray (bad with measuring but an A4 size!!) it should be just under an inch thick or a bit thinner it doesn’t expand or rise.
Cook for around 25 mins or until browning on top and then leave to cool before cutting into bars.
