Chilli Beef Nachos
Ingredients:
- Good quality salted corn chips – enough to cover the surface of two oven pans
- 150 grams of grated cheese – whatever you have – I used cheddar and mozzarella
- 1/4 bunch of coriander chopped
- One red onion finely chopped
- 6 cherry tomatoes finely chopped
- 1 avocado mashed
- Half pot of sour cream
- Left over beef chilli
Method:
- Pre heat over on 180 degrees
- Place corn chips on a lined pan in a single layer
- Scatter with the cheese evenly and cook for 10 mins or until cheese melted and golden
- Put corn chips on platter, dollop and scatter the other ingredients apart from the coriander in even spots around and on the corn chips
- Scatter the chopped coriander finally on topĀ
- Enjoy with lots of napkins and a cold beer
